I saw this recipe from The Gold Lining Girl around Easter-time and finally made it -- minus the colors, cutouts and coconut. I LOVE marshmallow and enjoyed taking the plunge and making it myself! This is Evan's Mom's candy thermometer (first time using one of these, too). One thing about this warm, liquid marshmallow... it's yummy and EXTREMely sticky! :) I plan to make some Mother's Day treats for Mom with it.

The Easiest Whole Grain Seeded Bread Thanks so much to Dana and John at Minimalist Baker who provided this recipe on their awesome blog/website! I found this bread VERY easy to make and it turned out GREAT, unlike some other breads I've made. I subbed 'bread flour' for the all-purpose because I had that on hand. No disappointments! For someone like me who doesn't have a lot of experience making homemade bread, this was a hit out of the ballpark. I highly recommend this! For recipe click here 7-Ingredient Museli Bread
Since I was making the other dough, I decided to try this bread recipe at the same time. Again, delightfully happy with the outcome!! DELICIOUS and easy. (I used 'bread flour' again instead of the all-purpose.) If you try these, please let me know if you liked them. Thanks again, Dana and John at Minimalist Baker for your awesome website and recipes! Thanks to Kristen at CookiesCakesPiesOhMy for this delicious recipe! Instead of using a 13 x 9 pan, I prepared these as cupcakes. Despite slightly over-baking them, they turned out moist and delicious and are especially tasty chilled! I used a cream cheese drizzle on mine.

(Click here for recipe from Michelle - the Brown Eyed Baker) As any caregiver knows, things can get stressful at times!! I enjoy baking to relax, and things have been pretty stressful lately... :)
I recently came across this awesome blog...The Brown Eyed Baker. I found this recipe for Homemade Oreo Cookies and recently gave it a try. (I opted for the 'slice the frozen dough log' method of cutting the dough, rather than using pretty cookie cutters, but if I had more time I'd love to cut them properly next time). Evan said they tasted "better than REAL oreos!" WOW!! If you try this recipe, please let me know YOUR thoughts. :)
