BEST BLUEBERRY COOKIES
With fresh blueberry season in full swing I was excited to try this new recipe. But for me-- it was a flop... The cookies didn't rise for me! Not sure what I did wrong... I often listen to Joanne Fluke's Hannah Swensen mystery books on CD while I'm working in the kitchen. "Hannah Swensen" owns a bakery and Fluke includes recipes in her books. Saw this recipe in the Sunday newspaper... This is probably the best chocolate cookie I've ever had. The raw dough reminded me of the filling in a fudge sandwich cookie!. There are many variations for this recipe online. Below is how I made them...DELICIOUS!!!! Try what works for you! Recipe: 1 package brownie mix (for mine I needed to add 3 eggs, 1/4 C water and 2/3 C vegetable oil) Filling: 1 (8 oz) package cream cheese (room temperature) 1 egg 1/3 cup white sugar 1 12 oz. bag chocolate chips (or less if you don't want to be so decadent!) Directions: Follow directions for brownie mix - cake style. Mix room temp cream cheese, sugar, and egg in small bowl until smooth and creamy. Add chocolate chips. Set aside. Pour prepared brownie batter into greased 9 x 13 glass pan. Plop large spoonfuls of cream cheese mixture on top of brownie batter into 12 sections / making 12 LARGE brownies. Of course, you may position the cream cheese part however you want! Bake at 350 for 45 mins. or until toothpick comes out clean. Let cool and refrigerate.
